Welcome to Android Central! Whenever it receives 5.1.1. No word yet on an exact date, though.
 
Will the WiFi update (if it ever happens) allow the watch to sync with my phone if I leave my phone at home (connected to my home WiFi) and I'm at work on the work's WiFi? Or am I out in left field with my understanding of this?

Yes. That's the way it works. You need to have connected your phone to the wifi first so your watch know about it. Then your watch will connect to the wifi slot and communicate to your phone as long as its connected somehow to the Internet.

What I don't get is this: Let's say I leave my phone at home, connected to my home's WiFi. Then, as I'm out and about, how does my watch connect to various other WiFi's? I don't see a provision for entering new WiFi passwords and such, into the watch. If I'm at someone's house, and their WiFi is password protected, how would my watch use that network to send me updates from my phone?

It won't, your phone syncs it's known Wi-Fis with your watch, can't do new ones

I have the SW3 and can't figure out the wifi thing - I have the watch connected to home and work wifi. When I'm home though, I seem to get random disconnects as if I'm out of bluetooth range sometimes. Even though wifi is strong throughout the house. Any guesses what this is all about?
