why are there 4 contact points on the phone when the NFC only uses 2? what are the extra 2 for?
 
The extra 2 are for wireless charging. You need a compatible back cover for it to work.

The battery contacts aren't for wireless charging. And the wireless contacts aren't for NFC. They're two different sets of contacts.

I'm now more confused than ever. :)

There's a set of 4 contacts on the right side. 2 of the 4 connect with the
NFC antenna on the back cover. What are the 2 unused ones for?

There's also a set of 2 contacts on the left, just above the battery.
What are those for?
 
The other pair of contacts are for Qi wireless charging.
See, the LG quick circle wireless charging case and aftermarket charging stickers.
 
The NFC is not located in the battery it is on the backcover and can be replaced with another or a QI NFC combo.

Is there a way to get it back?
