Why is 1440 x 2560 considered "quad" HD.

HD starts at 720p, and 1080p is ultra-hd, while 2k is quad-HD. I know 720p might not seem like much these days, but only a decade and a half ago most people would have killed for the chance to have that resolution on their devices. The old tube TVs had petty bad resolution, somewhere around 240p I think.

That's kind of "pseudo-resolution", because NTSC doesn't consist of discrete pixels. It doesn't matter whether it's being displayed on a CRT or a flat-screen display. ATSC - the current standard - played on an old CRT display [using an adapter] would still be 720P for a regular channel and 1080p for an HD channel. It just wouldn't look as sharp because the phosphor dots .on the CRT aren't as small.
