I have a Samsung Galaxy S tab that had Verizon on it until I paid it off and switched carriers...now I use that tablet on wifi only so it has no current active SIM. I know updates are pushed by the carriers...since I have no active service on thia, does it mean I won't get the update?
will I get lollipop update on Verizon tablet with no active service?

It really depends on the carrier and how they push the update. Most of the time you can update via WiFi or at least using Kies in your computer, but sometimes some updates are 'locked' to having a valid SIM card from the carrier (AT&T, for instance, did this for the S3).

You download Kies to your computer, connect your device via USB, let it sync to it and it should tell you if an update via Kies is available. Again, note that some updates are not available other than OTA, so even Kies wouldn't show those.
