Will visual voicemail or any app show my voicemails in text?

I tried to find it in settings and I read about Voice to text but I can't figure it out, if its even possible.

Google Voice does it, but so does normal visual voicemail.

I think the OP is asking if the Visual Voicemail app transcribes an inbound voicemail message into viewable text, and if so, what you wrote isn't applicable. ("Send text" just tries to send a text message back to the number which already contacted you; "Save" just makes an audio copy of an existing voicemail message which saves into your music/audio directory.)

On AT&T, as far as I know, it does not transcribe voice to text, because the carrier at one point wanted to sell their own voicemail-to-text service, so this app's main feature was essentially disabled.

I'm on AT&T and can't even get into my Voicemail. Has anyone else had problems setting up voicemail? It asks me to enter my mailbox number specified by the system manager. I've entered every # I can think of. Any ideas?

Try contacting mobile support and open a ticket if they can't fix it in real time. I had issues (with Visual Voicemail specifically) because some features on my account weren't properly enabled or provisioned, and the first two support specialists I'd spoken with couldn't spot the problem, took about a week to completely resolve.
