I have installed/uninstalled a ton of apps including launchers. I have noticed a slight hesitation when interacting with the phone. Its not a snappy as when I first got it. (notice I did not use the "L" word :D ). FYI... I did modify the animation settings during this time period.

Do you think it would help things if I did a factory reset to smooth things out?

Probably a clearing of the cache in recovery might help just as well as a reset. Try this: http://forums.androidcentral.com/sa...ing-into-recovery-mode-galaxy-s2-s3-tab2.html
Follow instructions for the S3, and clear the cache partition.

What does clearing the cache do? Is it something that should be done on a regular basis?

Sometimes the system cache can bog down the OS from properly functioning. Either the data is old and Android has to spend more time 'finding' what it is looking for or the data gets corrupted, clearing it gives Android a refresh.

Cache clears often help with keeping a device snappy, and really only need to be done on an as needed basis, or whenever the OS gets updated. I typically do this once a month on all my devices. I have one specific day a month where I go through everything; my PC, Android devices, etc, and do cache clears, and software PC cleaning. Just a habit I am in. Come to think of it, I am due for this tomorrow...lol

Is there a difference between using the Reset option after holding down the power key for 30 seconds and the Reset option under the icon, Backup and Reset?

If you jump into Developer options, you could also switch from Dalvik to ART and then back...it forces every single app left on your phone to optimize. It'll take a good 15 minutes.
