XIONIA cwma v1.2518.6 on Optimus S--how do I "wipe system"?

For a long time I've been rooted with a stock GB ROM, with no other enhancements besides the Amphetamines exploit, which doesn't seem to do anything, really. I'm almost ready to flash a custom ROM and I've read good things about Hydro ROM, here.

OK, so I'm trying to follow these instructions --
1) Download ROM to the root of your SD card.
2) Boot into recovery mode (Xionia or CWMT Recovery)
3) If in Xionia recovery, wipe /data, /cache and /system. If in CWMT Recovery, use the "wipe system/data/cache" option in the main menu.
4) Flash ROM by using the "install ROM from zip file" option or similar.
5) Reboot, and PROFIT!

I've rebooted into recovery mode, which on my phone takes me to Xionia Clockwork, version as in the thread title. I see menu options to "wipe data/factory reset", and "wipe cache partition"; I assume this is what Drew means when he says wipe /data, /cache.

But what I don't see is any option that uses the terminology "wipe system". Is it under "Mounts and Storage"? I see a "Format System" option in the sub-menu there. Under "Advanced", there's also "Wipe Dalvik Cache".

What is the next step?

order of operations when in updating phone firmware
1 backup apps (optional)
2 nandroid backup
3 wipe cache partition
4 under mounts-format boot, system, data, cache
5 flash debug-formatsystem
6 install rom
7 flash google apps
8 reboot phone

I made this to help me stay in order when I flash new stuff.
I hope this helps explain it for you! :D

Yeah, formatting /system is the same as wiping it. FYI, drew's new Cannibal Open Touch recovery has an option to wipe system, data, and cache all in one step :p

Sorry for the rudimentary questions, but I don't want to screw this up. Of course I've already done the backups, both the apps and Nandroid, but I'd just as soon not have to go through an unplanned recovery effort.

Yes, do that from the install zip from sdcard menu. Also remember you do not have to flash gapps for stock based roms (hydro, reborn, Dante ect). It is aosp based roms like cyanogenmod, miui ect that do not have the google apps included.

Thanks to everyone here for your responses. I got it up and running and now I need to go over to the Hydro thread and join in the applause. So far it seems to be a fantastic ROM.
