What is the benefit of Sense versus the stock Android? If I turn off Sense, do I lose my settings in it?

No you wont loose anything. Just when You're ready to go back to sense and use your old scenes hit the home button and choose "HTC Sense". It'll boot everything the way it was when you left it. I just tried this, neat trick, good find! Oh and the reason to use this is because I hear it helps save a whole lot of Battery.

You might want to look into alternative launchers like AVD.Launcher and Launcher. They give you a lot a lot more customization than Sense along with some cool features.

I like that they give you a landscape home view. You can see screenshots in my thread about why Sense does not support landscape.
