    I want to edit the end of my droid emails so they say something other than "sent from my Verizon...phone".

    How does one do that so it's permanent, or at least the same for all emails?

    If you're using the standard Gmail app go to: Settings > select account > Signature. Type in the signature text you want and Save. If you have multiple email accounts you'll have to do that in each account.

    If you're using some other email client the exact steps may be a little different but the concept is the same. A little poking around will find the signature setting.
