deleting or unsubscribing applications

I have attempted to delete/unsubscribe by going to menu-settings-manage applications- picking the application. When I go to select unsubscribe it is dithered or grey so I can't select. I'm not sure what to do at this point. Every time I open Task Killer there are the same application on there everyday and I would love to delete them.

First off: Task killers don't work on Froyo, unless you're talking about the Android Task Manager. If you're using Advanced Task Killer or something, uninstall it.

Secondly, you're trying to delete stock apps, a.k.a. "bloatware", or apps that Verizon has included on the phone. Those include things like CityID, VZ Navigator, Vcast Mobile, Slacker and Footprints. The only way to delete them is to root the phone and use a utility like Titanium Backup to disable them (or just download a custom ROM). You can't delete them without superuser access.
