Headset Mode Menu

Can you edit the app suggestions listed in the drop down when in headphone mode. I use the suggested apps 0.00% of the time and would like to change them to more sensible choices like pandora, play music, and sirius.

It does not appear that you can edit these without root. You can get rid of the menu (and the annoying headphones icon) by disabling the ContextAwareService in the application manager (Thanks ICS!). I have been running for a week with the service disabled and have noticed no ill effects.

Any idea how to turn headset mode off? I can't find an option to do this when I plug it in via Auxiliary.

On the headphone page near the top right there is a settings icon (the little gear). That will bring you to the page buddy settings. Just turn off page buddy and the headphone page/notification area will not show up again.
