How do I disable any tracing or tracking programs or applications connected to my phone?

Normally in this situation you would need to root your device to remove/disable any software or ' apps ' in question. What is important to realize too is if there is something tracking or tracing related that your worried about that is built into Android OS itself then you would need to edit code or find a ROM dev that has created a ROM with whatever removed/disabled.
