Changing a Galaxy S5 from Global to GSM/UMTS?

I need to change my S5 to GSM/UMTS and it doesn't seem to be an option. LTE/GSM/UMTS is an option but I need GSM/UMTS specifically.

What's available in the phone depends on the ROM (therefore, both the manufacturer and the carrier). If the GSM/UMTS choice isn't there, it isn't there. You can't make it appear without flashing a different ROM or using some rooted app that enables it. (The only difference is that with LTE/GSM/UMTS, the phone will use an LTE signal if it's available.)
