WHen I'm talking to someone, and I want to put them on hold so that I can talk to someone in the room, (not another call, but anohter person next to me) without the person on the phone hearing what I say.

Hello. I don't know which device you have, and some phone apps are different, but if you have the proximity sensor working and you take the phone away from your ear, it should be still on the dialing screen and the mute button looks like a microphone with a slash through it. This cuts off the sound at your end.
