Why do my earbuds cause my volume and voice recognition to go haywire?

I have a strange problem with my LGK7 where whenever I plug in new or pretty new headphones it cause my volume controls to go haywire, and the voice search feature to pop-up randomly, even if my room is silent and I haven't triggered it. Again, this seems to only happen with my newer earbuds, and it happened with my old pair for a while, but then stopped.
