Set up without a sim

I have decided to wait until the 12th to activate on Verizon. That being said if I begin to set the phone up without a Sim then add the Sim later will I have issues?

no. use WIFI.

I didn't. I set it up using WiFi, then popped in the Sim and all's well.

You won't have any problems. Just set it up like you normally would. Just over wifi. When you get your sim card, power the phone down, activate the SIM, and pop it in. Sometimes it takes a couple of reboots for it to recognize the service.

A couple of reboots? Never once more than a single reboot with any phone, except while roaming.
