how does the laser focus work? is it like on a regular digital camera? (i.e. the laser projects a red or green patter on the subject. like on my old Canon and Sony digital cameras)

It projects a cone of infrared lasers to predict the focal range.

INFRARED you can't see them. Same kind of laser in an IR Blaster.

on my Sony camera, I can take pictures in TOTAL darkness... wonder if the G3 will be able to do that?

Maybe but since it falls back to contrast focusing on fail. I bet they don't so you can't tell when it fails to work.
