All five of those listed were taken outdoors in the middle of a sunny day 720p resolution with no other weird settings.

It's a frame rate issue. I just viewed all 5 of the videos I took today and the frame rate fluctuations are huge. The "best" video fluctuated between 21 and 30fps. The worst video had a minimum framerate of 10 fps and a maximum frate rate of 30fps. That is a huge difference and makes the videos...

I just transferred an 11GB MKV to my phone yesterday. I used the right-click, send to Nexus method. I noticed that with USB debugging enabled on my phone file transfers would be hit or miss and often they would fail. Maybe try to disable USB debugging.
