I'm not sure if you can check the current speed, but you can set the min and max by going into settings then cyanogenmod settings then performance then cpu speed. I highly suggest you try out the 1.3 GHz kernel if you haven't yet

I definitely would like to root at some point, but I would really prefer not to lose my app data. If I had to wipe right after I got root, but had a chance to titanium backup, that would be okay too. Will rooting without wipe ever be possible?

I actually bought mine on Craigslist rooted. The seller's test email address was still on there. I had to flash a new rom to get it off. I would personally put cyanogen on, because it offers the best mix between stability and functionality. You may want to throw on Dalingrin's OC kernel too.

I'm planning on moving from a 2gb card to an 8gb card. I'm rooted, CM7 RC4 on emmc with Clockwork 3.0.1. Are there any root/system files that are typically stored on it that won't be tranferred easily by copy/paste onto the new card?

What nightly are you using? I had wifi issues up until last week but after flashing the latest one, it works perfectly now.
