A few days ago I started to notice that "Android OS" was using quite a bit of data but today it went too far. It used up over a GB of data and I have no idea why. What causes this and how can I fix it?

What phone/release? Typically, when Android OS is using a lot of data like that, it is most likely part of the automated backup process for your Google account. Are you on 6.0, by chance? 6.0 introduced a new backup method that backs up internal app data for apps that support it (meaning the app will get restored to that state on a factory reset). That might be the case here....
