Keeping the phone screen on when plugged into power

Installed the S5 on my motorcycle and want to use if for GPS maps. No matter what settings I seem to change in settings, the phone screen shuts off. I have a power connector so I'm not worried about battery life, just want the screen to stay on until I change the setting, such as after I remove it from the motorcycle.

Go into developer options and there is a setting that keeps display on while charging... you might have to turn on developer options...

And maybe lengthen the display time out...

To enable Developer Options, go to Settings, System, About Device, then proceed to tap multiple times in your build number - a prompt will let you know you've enabled Developer Options (you would need to back out to Settings, System to see it).
