The turn off button for apps found in Settings/General/ "Application Manager"

Can someone tell me what this does?

If yo want to disable some of Samsung's apps that cannot be removed will this stop the app from using resources?

My big concern is something like the "ANT apps" may be used for apps that I want to maintain?

Trying to make sure this tablet stays smooth and speedy while remaining in stock.

That's also known as Disabling. Disabling an app prevents it from appearing in your App Drawer, and it won't open automatically and therefore take up active RAM. Disabling a big bloated clunky app that you never use might help performance. There's no harm, because if something starts to misbehave, you can always re-enable it again.
