I plan to bring my Sprint Galaxy S3 to Europe and use it via Skype and wifi. Regarding charging, I see on the charger that the voltage range is 100-240 - I believe that means that I only need an adapter and no converter. Can someone confirm this before I brick my phone please.

Your assumption is correct. You only need an adapter. You do not need to bring a convertor for your phone. Just make sure you bring a charger that is marked with the 100-240 voltage designation.

Would the charger that originally came with the fun work with an adapter in Europe or does that not meet the criteria of being within the 100 to 240 volt range? Please advise. Thank you!
