Does the Galaxy S3 have a rom I can flash that will get me updates str8 from Google instead of AT&T?

no it is impossible.

EDIT: I should expand that to say that you can get some ROMs that are close to AOSP that have updates. CM10 being the one most talk about. They take the google code, add some stuff (mods) and push it out. They pretty much keep the Google code up to date.
