Don't remove. Use
Link2SD to freeze any apps you want to remove. Then if the app not being available causes a problem, you can just unfreeze it.
You can probably remove any carrier-branded apps. You can uninstall any apps that you installed.
I wouldn't go much further than that unless someone has uninstalled another system app and hasn't had any problem for at least a month.
Once an app's been frozen for about a month and it hasn't caused a problem you can uninstall it. (I'd still back it up [I use
App Backup & Restore] before uninstalling it and keep it on a computer, just in case.)
