My usual answer to this is, if you have to ask, you probably shouldn't be rooting. There are quite a few things you can do with root access, like deleting apps you don't use (which also opens up the ability to delete crucial files/apps), modifying the theme of different aspects of the OS, installing apps that let you back up more data than usual, and many other things. But with every Android update there is (imo) less of a need for it since stock Android now has a lot of the stuff that was once limited to rooting.

If you really want to do any of the things above, I suggest reading more about what you can do with and look for a thread on rooting your specific device. Make sure you have the file for your correct model number, carrier, version number, etc. and you'll likely be fine. But always follow the instructions given by the developers or other users providing the files :)
