How do I turn off everything BUT my phone and texting while I'm overseas?

I will just need phone and texting service. Everything else needs to be off, but I can't find out where to turn it all off but the phone!

Welcome to Android Central! Which phone? Do you mean that you want to turn off mobile data? It's usually in Settings>Wireless & Networks>Cellular/Mobile Networks. Uncheck Data Enabled. Some phones have a mobile data toggle in the Quick Settings (swipe down from the top of the screen with two fingers).
