How can I delete or override AT&T installed apps on an unlocked Galaxy note 4?

Phone is of contract and I installed a tracfon sim card. phone works but ATT aps interfere with some operations.

Welcome to the forums. Most of those are system embedded. They can't be removed without root access.

Welcome to Android Central! You could probably disable some of those preinstalled apps in the App Manager. Select the app there and see if there is a Disable button. This prevents the app from opening in the background, or being updated by the Play Store.
