I am planning on replacing an old slow 64GB microSD card in my Galaxy S7 edge with a newer faster 128GB microSD card.

I already have pictures/video moved to the SD card and some apps that I have moved to the SD card.

What would be the best/safest way to replace the card and transfer the existing data to the new card?

Transferring the media files is simple:
put the old SD card in a card reader
copy the files to your computer's hard drive
put the new SD card in a card reader
copy the files from the computer to the SD card

The apps may present a problem depending on how the phone named the SD card when it was formatted.
You might need to temporarily move the apps off the old SD card back to the internal storage, then transfer the apps back to the new SD card.
