My phone is displaying a voice command icon instead of the keyboard.

I purchased a Motorola E 1st gen phone two years ago and until recently, it displayed a keyboard for typing responses, which I prefer. However, two weeks ago, it began displaying a microphone icon instead, which I have to tap for it to respond to voice command, which I hate. How can I restore the keyboard and how might this have occurred so I can prevent or remedy it, if it occurs again in the future? Thank you,
