Updated on its own which is bull**** to begin with and my volume buttons no longer do anything. How do I revert back to the previous update?

Welcome to Android Central! Which phone? There's no easy way to roll back system updates. On Samsung phones, you can use Odin to flash the previous firmware: http://forums.androidcentral.com/amb...interface.html

Does this persist in Safe Mode? You can also try wiping the cache partition, if that's possible on your phone.

It's not, actually. It costs money to maintain an older version - and you stop getting security updates, which can cost your phone in some cases. (If you get ransomware that the current version is protected against, and your phone is locked and you have to pay $X to some offshore address to get the key to unlock it ... I think you get the point.)
