I absolutely hate the android pie update,l on my galaxy s8, and am trying to find ways to deal with it before just factory resetting my phone. The biggest thing is the app viewing screen being changed to vertical swiping- can this be changed? Otherwise, looking for advice on how to go back to the old version. Feels like I have an iPhone now, hate it.

Welcome to Android Central! If you install a 3rd party launcher like Nova, you can adjust how the App Drawer scrolls.

You need Samsung's Good Lock from the Galaxy App Store (not Play Store, the one there is fake). Then once you have it, install the Task Changer plugin then you can select if you want the recents app view to be List (like older Android versions), Grid, Carousel (Pie default), or Stack (iOS like).

before just factory resetting my phone
And, for the record, a factory reset won't revert the OS version to what was on the phone when you bought it, it will only erase the data and apps you've put on the phone.
