Why does my android device connect to google when i have uninstalled all google apps from my phone ?

I have a micromax a 116 running android 4.2.1 jellybean. I recently rooted and uninstalled all google apps completly, each and everyone including setup wizard, google system framework app, etc. Also the preinstalled micromax bloatware. Then i factory reset my phone. After boot i connect to my wifi and see in the data usages it shows that under app name "Android System" data is being consumed. It is the only app that is consuming data even though i am not using any apps. Then i installed(sideloaded) an app "Network Connections" and it shows me it connects to google servers. And overtime it consumes whole lot of data.
 
I would expect those apps to have been reinstalled as part of the factory reset (the whole point of that is to put the phone in a "like new" state), so have you verified if they have or not?

In general, it's very hard to completely remove Google from Android because they are almost one in the same. You may have to resort to flashing an entirely new third party ROM (assuming a compatible one exists for your phone) to get Google completely out of it.

If data use is your main concern, please register and reply with more details on how much data is being used, what your goal is, any diagnostic steps you've already taken, etc. We may be able to help control your data use without going to the nuclear option.
 
Part of Android is a package that checks for things like updates periodically. If you remove that app, the phone stops working. If it's still working, you still have Google packages on it. (An Android phone can not run without a few Google apps.)
