I am not looking to install a custom rom or anything like that (yet), I just want to have root access for the purposes of backing up all of my data.

Would I be able to get root access on the stock rom that the phone comes flashed with after I performed the HTC Dev unlock? Or would I still need to flash a custom rom after using HTC Dev to root it?

Flashing a custom recovery will do it. No need to ROM

Why do you need to root to back up all of your data?
