Android Wear allows you to pair different watches to the same phone, but not different phones to the same watch, unfortunately. This also means that if you want to pair your watch with another device, you need to reset it (as in wipe its data). Same thing if you factory-reset your phone, you need to wipe the watch as well to re-pair.

I hope they change this at some point, but as of now, that's how it is.

I do too... I really want to be able to control both my phone and tablet with the same watch without having to reset it every time I want to switch.
