I plan on using any of my Android devices with a Chromecast and a Bluetooth keyboard as a mini desktop setup, and i was wondering if anyone can give a suggestion for a launcher that will play nicely with the keyboard/mouse? Also, one that will just look more like an actual desktop computer start menu (ie win10, Ubuntu, MacOS)

I don't think that kind of launcher exists. But if anyone has heard of something like that they should tell you here. On the other hand I'll suggest this: What’s Remix OS for PC? Remix OS for PC is built on the Android-x86 - Jide Technology As you can see it's still in BETA testing so it might not work well. Plus you won't get the Play Store. You'll have to install that separately. But you'll get a genuine desktop experience on top of Android 5.1.1.
