I think they changed it to pinch to zoom now, so try doing that to see if it'll go completely full screen. If that's not working, force stop YouTube, then clear the cache. That worked for me. Hope this helps.

My sister had the same problem with her Gear S3 smartwatch. I was able to figure out what the problem was, though. It turned out the watch was set to turn off all sounds. Go to the accessibility settings, then hearing, and make sure you turn off the "turn off all sounds" setting. Hope that helped.
