Just got also the same problem with sound level after 5.0.1 update. I shutted phone down, took out the battery and cleaned the speaker on back which was covered with dust. Booted it, sound levels seem to be normal... Maybe this is because dirty speaker - or that have not factory resetted after...

With root you can i.e. remove all bloatware with root uninstaller. Needs to be careful though, that you dont uninstall any important system apps. Installing custom kernels and roms you may need Odin or custom recovery to flash those. And it always have some possibility to brick your phone, if...
