I've left US English in the list but placed UK English back to the top so the phone uses UK all the time and Google assistant has worked since even after reboots and clearing of cache.

Yes it still seems to be hit and miss as it took several days of trying to show up in my wife's 6p.

I actually got it several days ago by putting USA English at the top of the languages in main settings, then going into the apps settings and deleting the Google app search data. Assistant then showed up and has been working ever since even after changing back to UK English. However at that time...
