Cannot switch my keyboard to ANOTHER LANGUAGE on my S5

1. I've successfully selected Hebrew as a 2nd language via LANGUAGE INPUT
2. On message keyboard I can swipe space bar and see QWERTY CHINESE RECENT (what's that?) and SMILEY as language options, NOT HEBREW
3. EVEN WHEN I SELECT CHINESE, my keyboard stays QWERTY
4. I've seen the forum suggestions about off'ing all ACCESSIBILITY OPTIONS - NOTHING IS ON.

What's the deal? Kindly advise before I throw the thing out my window. Many thanks.

Which keyboard are you using? Default Samsung or Gborad or Swiftkey or what?
