Well it depends on the display. AMOLED, LCD, IPS.
There might be better colours, balancing, accurate colours and brightness.
Though, as I have barely used a HD Device, I wouldn't have the best answers.

Look at in terms of a tv. They say that it really depends on the viewing distance. The differences are decent if you are viewing at longer distances say 12 feet. In this case though the distance never changes, your phone will always be held at the same distance because through use you will find the optimal arm position for comfort and that position will follow you from phone to phone. The differences are negligible between the 2. Contrast, saturation and brightness are where you see the biggest differences between screen types.
I had the S4 first and returned it for the Note 2. I can tell the difference as the S4's screen was just awesome. The difference wasn't huge but I can tell. The Note 2's screen is great too and can't beat the extra real estate and s pen functionality!
Although watching a video likely wouldn't be significantly different, wouldn't you get the ability to have a bigger work area for writing? That is, if there is 1920x1080 pixels on the Note 3, you can draw with more resolution. Yes, the screen is 6 inches vs 5.5 which is pretty close, but you can draw smaller things couldn't you?
Go take a look at the LG Optimus G Pro.
It has the same size 5.5" screen as the Note II but it is a 1080p screen.
You will notice the differences when looking at texts on websites but not so much on movies or photos.
Went to the phone store and checked out the phones with 1080p screens again and I still can't see the difference. My Nexus screen looks as clear as the rest of them.
