A73 - How Can I Change The Camera Shooting Resolution?

Open the Camera, select the Settings (gear icon),
and select the resolution you want for both the front and back camera.

There is no Resolution Setting!? (Camera - Gear Icon (Top Left) - Camera Settings)

I’m at the regular Photo Mode (Not Portrait, Fun, Video etc.)

What is the exact name of it? What is there below and above of it?
 
Can you post a screenshot of what appears when you select the gear /settings icon?

There's nothing to set the resolution of images in the camera settings of my S24 Plus either. I see the same options the OP posted.

There is a spot above the camera preview that toggles between "50 M" and "12 M", which I assume is megapixels. But that's it.

I think most stock camera apps no longer have an option to adjust the resolution. If you need to resize a photo in order to make it a smaller file, there are plenty of apps that can do so (including Snapseed, which is a Google product -- in that app, the option to decrease the size is in the Export command).
 
You would hope that especially without the ability to use an external SD card they would have kept these settings available, but I guess not.

You could always try a 3rd party camera app that might have this feature. Maybe give Open Camera a try?

Mine doesn't have it either. :confused: Though I think my S7A does.
In that 'Settings to keep'.... is there any general consensus on what's typ good to have toggled on or off?
I.e. — 'Camera mode'? ... 'Selfie angle'? ... 'High picture resolutions'? ... 'Filter'? ... 'Super steady'? ... 'Portrait zoom'?

So they shoot at the max resolution setting. Right?

So do you recommend third party camera apps right?
 
If you can't find a setting to change the resolution in the stock Camera app, then yes, you'd have have to try a 3rd party app.
