Advanced - Auto deecting on band or watch

I have a S23 ultra phone and a Galaxy Pro 5 watch. On the watch in Samsung health I have set "Activities to Detect" as off. On the phone in Samsung Health under Advanced I see this:

It is not selectable on the phone. It seems as though Samsung Health on the phone is forcing the watch to auto-detect workouts even though the watch is set to not detect them.
And it is auto detecting workouts at a time that I don't see it on the watch and can stop it. So like this morning I had 145,000 steps while riding a motorcycle when I am not looking at the watch nor listening for the tone.

If you open the Wear app, go to your Watch and tap Watch Settings, scroll to the Samsung Health section. Are 'activities to detect' selected or completely disabled?

So they may be coming from the phone since when the watch is connected, it disabled the ability to turn it off on the phone and displays a message Auto Detect on band or watch?
I guess to test it I would need to leave the phone at home. Or disconnect the phone from the watch, but that is hardly useful long term.

But when I go look at the watch, it will be in the middle of a workout with 10's of thousands of steps, so even if the phone starts the work out by itself, it is telling the watch to start counting.

Try this: Put your watch on airplane mode, then open Samsung Health on your phone. Turn off "Auto detect". Put your watch back online. The switch should be off but grayed out.

Also, you can go to your Steps in the Samsung Health app on your phone, tap the menu button, and in the 'select data to show' option you can isolate data coming from the phone (or other sources). If the 'phone only' option shows steps, then you know where the auto-detect is coming from.

Another thing to check, is go into the Exercise section of the app and click on "View history". This should display any workouts, where they came from, AND if they are truly auto-detected. If you find a workout that's coming from your watch but it doesn't say AUTO, then there's something else triggering the workout tracking (most of the time, water, conductive debris, or accidental touches, especially if you have a workout widget in the first few positions; also if you've set up any button presses to begin tracking, your wrist may be pressing against them while riding the bike).

Well, having the watch not connected allowed me to turn it off.

So I guess I will see if it fixes it this weekend. If it does, that is an awfully poor integration by Samsung,
You mentioned checking the exercise history, which gets more interesting On June 4th, you can see I went for a short 45 mile walk on June 4th.

But when we check the exercise history, it shows no such walk. I don't have any other activity tracking app.
