All my screens changed on my Galaxy S5, how can I fix them?

All my screens changed on Galaxy 5s

I was deleting some apps on my phone this morning (don't remember which ones) and I must have deleted one I needed because since then all of screens are not set up the way I set them up. It kept/keep asking me to use Touch Wiz Easy Home when I press the home button.
All the widgets are bigger and all my apps are in the additional area. How do I get my screens back? I am in the process of backing everything up in case I do any type of reset.
How do I back up my text messages outside of screen shots and emailing them to myself?
