I am really not a fan of having information displayed at all times but i do like the home button, is there a way to have incoming texts displayed on the AOD but not time/date etc? Basically i just want the home button, but if i select that option texts do not come through on the AOD.

Darn, wonder why samsung decided to do it that way?

My second question would be if i find a skin that i like from the theme store, is there a way to make it stop auto adjusting its brightness? I have auto brightness turned off but it still does it.

I don't know why they did that. There's nothing you can do about the automatic brightness of the AOD. Samsung set it up this way because the AOD turns off when the phone is in your pocket or facing down on a surface. This way, the phone will reduce power drain.

Samsung said that the AOD will use ≈ 1% per hour.
 
The full text message does not show up on the AOD screen. It only shows the icon of the texting app in a circle. Do you mean the lockscreen? If you do mean the lockscreen, go under lockscreen and security, then click on notifications. There's an option to only show icon instead of the full message. Click that and then scroll down to select what apps you want to show up icon only.

You can always keep the AOD off and simply press on the screen when you want the home button.
