Is it possible on the Galaxy S10e to set certain numbers to always go to voicemail without ringing at all? I had that setup on my LG G5 for my soon to be ex. I'd like to be able to do that again.

Yes, just block the number. In your phone app, find the number and tap it. Hit the I and block it.
