Question? Is the update automatic or can you choose not to take it? My stock Sprint Edge with Kit Kat works just fine...

I think you can opt out three times. After that, you are forced to install the update. But it looks like Android 5.1 may never come out for the Note 4. 5.0.1 hasn't even made it's way to the Note Edge or all of the Note 4 models at this time.
