I decided to install Preview 5 of Android N. I had tried a previous preview and it was a mess but I figured this one is so close to release it might be fine. One of my goals was to get bluetooth to work in my car again.
Recap of what I and similar to what others are experiencing: In Android M (6.0.1), my car would connect for about the first 30-60 seconds of a call, then disconnect during a call and sometimes remain disconnected or randomly reconnect and disconnect throughout the call. It made bluetooth calling impossible. Someone did post a possible fix where you could disable contact sharing and it would remain connected (didn't work for me though).
It looks like Android N has fixed the problem! I have made three calls over the past couple days since installing Preview 5 and all of them remain connected normally. I do have contact sharing off because I don't use it anyway.
I'm not going to start the official celebration until the final version of N is released and it still works. So far, the most annoying problem with my Nexus seems to be fixed.
Caveat: this is my experience on my 2010 VW. It may or may not work on your car. There seems to be a lot variety in automotive bluetooth calling.
