Depending on your carrier, you can try to root and flash either the Google Phone Edition or a custom ROM, like Slim or Cyanogen.

I like Nova launcher also but the op is wondering if he can put plain Android software on his phone without all the Samsung software much like a nexus phone has. I am wondering about this too.

I have nova and its slick, but it doesn't change all the other Samsung apps that lag like crazy. I'm on a T-Mobile s4 and want out of touchwiz too

Depends on your Android version. 4.2.2 is fairly easy to root and flash ROMs on to.
As far as I know, there is no recoveries for 4.3 so you can't flash any custom ROMs yet
