Anyone know how to fix this alarm clock issue?

I would try a factory reset at this point -- see if it helps resolve the issue.
 
Wow "flamechica" - I didn't even know I had the issue until I read your thread! I use Alarm Clock Xtreme, so I never noticed - I am with Verizon and the standard alarm clock comes up the same as yours. Therefore, it's not just Sprint! Very interesting... I have no help however - just thought I'd add that Verizon has the same issue. It's probably like the other folks are saying - Samsung pushed some kind of "patch" back in Dec and that's probably the culprit!
 
Yup. Only way to "fix" it is to download another alarm app. Doesn't look like they are ever going to revert back to the old, better style. Apparently, they never heard of the old saying "don't fix what isn't broken." The old way wasn't broken and worked great. This new one sucks!
 
This has probably been said but what happens when you click "repeat"? That's where you set weekly settings.

If you want to set a one time alarm for Friday. "ok google, set alarm for 6am Friday April 24th"

Kirk, repeat will make it repeat every freaking week on the day you choose. So, you have to remember to turn it off or you are woken up the next week on that day and with my schedule, it is unlikely that I need to get up that day at the same time the next week.

I did answer the Google voice thing in a previous response. Last time I used Google voice to set an alarm in the future, it set it for tomorrow at the time I requested. It absolutely refused to set it a couple days in advance, it always set it for tomorrow no matter what I said. Now, that I have been updated to lollipop, I have not tried it again. I suppose that could've been fixed with the update.
 
I don't know what that to say. As far as I can remember the stock alarm on kitkat and my other phones it's been weekly. Try setting a reminder (in Google keep or via the calendar) rather than an alarm. Also it helps if you give it an actual date rather than just "Friday"

Hello OP, so I have confirmed that it is impossible to set a singular alarm outside 24 hours with stock android clock (my version).

You either have to select repeat, and remember to turn off/delete the alarm afterwards, or you have to wait and remember to set a singular alarm the day before.

I confirmed this by asking Ok-Google to set an alarm for thursday the 17th at 7:30am (currently it is the 16 at 6:30am), and Google said "Actually, alarms can only be set within the next 24 hours". Apparently this change is intentional.

Ridiculous right? I've had plenty of older android phones that have stock alarms where this is possible. I used it all the time.

I suspect there is some strange reason behind this change. Using the phone as a one-time trigger for a dangerous device? Maybe encouraging users to utilize reminders & calendars instead, thereby increasing usage of google-services? They've manipulated users before in that way (youtube & G+). I can only speculate.

Anybody else with later android version phones that can set non-repeating alarms several days in advance?

Yup, Som Guy, I am aware, but thanks. I have been dealing with this issue since I got the phone way back in December 2014. The only way to do it is to download another alarm app. If I knew who to complain to.... I would! I hate that they took that feature away, it's a bunch of crap. Such a simple thing, but I used it ALL the time on my Note 2 and really miss it. I can't imagine it uses that much "resources" or anything like that. I honestly can't think of any good reason that they would take it away, besides that they have their heads up their rears!
 
I had the same problem exactly, found this thread and the "OK GOOGLE" thing worked for me. I just told it to set the alarm for every weekday and *POOF* problem solved..
